Michelin Guide 2025: Tokyo’s Finest Ramen Shops

Bib Gourmand is Michelin’s recognition system for establishments that offer exceptional quality food at moderate prices. Introduced in 1997, it honors restaurants that provide excellent value for money. To qualify, restaurants must offer meals at prices below certain thresholds: under 35 euros in Paris, under 40 dollars in America, and under 5,000 yen in Tokyo.

In 2025, 17 ramen shops in Tokyo have earned the prestigious Bib Gourmand recognition. Here’s a guide to each of these outstanding establishments.

10. CHUKA SOBA KOTETSU, Setagaya, Tokyo

Overview

The owner created this shop with the goal of being loved by the local community, using the familiar “chuka soba” (Chinese noodles) as its signature. The noodles are low-hydration and cooked firm, giving them a pleasant chewiness and pronounced wheat flavor. While light-bodied, the soy sauce flavor delivers profound richness with rustic appeal.

The recommended choice is the Tokusei Chuka Soba (Special Chinese Noodles) at 1,100 yen, which upgrades the basic Chuka Soba (900 yen) with two large pieces of chashu, seasoned egg, wontons, bamboo shoots, and daikon sprouts—offering exceptional value among Bib Gourmand establishments.
