While several other Jiro branches offer equally delicious ramen, Hibarigaoka’s exceptional popularity is often attributed to the owner’s personality. Unlike the typical Jiro experience—where stern-faced staff work silently with intimidating demeanors and might scold customers who try to strike up conversation—the Hibarigaoka owner is known for being friendly, courteous, and welcoming. No.4: Shinjiko Shijimi Chuka Soba Kohaku Tokyo Main Shop

The popular menu items include the standard “Chuka Soba” (available in salt or soy sauce) and “Tsuke Soba” (dipping noodles). The “Chuka Soba (Salt)” is particularly exceptional, with a soup that fully showcases the umami of freshwater clams from Lake Shinji.
